We are beginning to evaluate our upcoming correctional food service contract and are looking to review examples of recent food service RFPs from county jails or similar correctional facilities. If you are aware of any jurisdictions that have recently bid or awarded food service contracts, I would greatly appreciate any RFPs or specifications you would be willing to share.
For context, Hillsborough County currently employs our own county food service staff and contracts with Trinity Services Group, which provides on-site management through a single staff member. Our contract also includes meals for our employees, so we are interested in examples that address both inmate and staff meal service.
As we begin reviewing our specifications, we want to ensure our RFP reflects current industry standards and best practices. Some of the areas we are specifically interested in include:

Medical, allergy, and religious diet requirements (Kosher, Halal, vegetarian, etc.)

- Registered Dietitian oversight and menu approval

- Any other provisions that have become standard in more recent correctional food service procurements
